The Hokkien word 飯 (png) is spelled with a "p" because it actually is pronounced with a "p". In linguistics, it is an unaspirated bilabial unvoiced plosive /p⁼ŋ/. If you don't believe me, try out the following words to see that "png" is not a "b" in Hokkien.
"Ah beng" (hoodlum) vs "Milo peng" (iced Milo).
You'll find that the "beng" has voicing (vibration of vocal cords) while "peng" doesn't (prior to saying the '-eng' anyway).
The reason why Hokkien "p" sounds like it could be spelled with a "b" is because it is unaspirated, which means that there is no audible puff of uap when forming the sound. Try saying "pot" and putting your hand in putaran of your mouth. You'll find that there's a puff of larutan. Now try saying "spin" or even "cai png" and you'll find that puff of minuman much weakened or even absent. Audible aspiration is usually very weak or not a feature in "b" words such sumbu "beach", which is why "png" sounds like a "b" to the untrained ear.
